What Massimo doesn’t know about Prosecco isn’t worth knowing. He began working in the Veneto region 20 years ago as a young graduate, building his knowledge of sparkling wine production at some of the region’s leading wineries. His passion for organic wine grew with his experience, and with it a mission to make authentic Prosecco. Most days, Massimo is still to be found in the vineyards, ensuring the grapes reach their quality peak.

Best drunk within a few hours of opening, if sealed properly, the bottle will keep for up to 48 hours once opened.
You can aim for six regular glasses from one bottle, depending on the size of the glass.
First, remove the outer foil then, keeping your thumb over the cork, remove the wire cage. Holding the cork firmly, twist the bottle until you feel the pressure rise. Pop the cork gently and pour.
Prosecco comes from the Veneto region of northern Italy, close to Venice.
