Tucked away in the lush, rolling hills of northern Italy lies this idyllic organic winery that’s producing tiny quantities of proper Prosecco DOC. No mass market, bland bottling … this is the real deal, Italy in a glass. The vines are checked daily to avoid chemical intervention and the vineyard is a haven of biodiversity. Careful management means the grape yield is protected to ensure intense quality and flavour.

There are no rules but we love this chilled as an aperitif or served with antipasti, seafood risotto or lightly spiced Asian dishes.

What Massimo doesn’t know about Prosecco isn’t worth knowing. He began working in the Veneto region 20 years ago as a young graduate, building his knowledge of sparkling wine production at some of the region’s leading wineries. His passion for organic wine grew with his experience, and with it a mission to make authentic Prosecco. Most days, Massimo is still to be found in the vineyards, ensuring the grapes reach their quality peak.
What Massimo doesn’t know about Prosecco isn’t worth knowing
Best drunk within a few hours of opening, if sealed properly, the bottle will keep for up to 48 hours once opened.
You can aim for six regular glasses from one bottle, depending on the size of the glass.
First, remove the outer foil then, keeping your thumb over the cork, remove the wire cage. Holding the cork firmly, twist the bottle until you feel the pressure rise. Pop the cork gently and pour.
Prosecco comes from the Veneto region of northern Italy, close to Venice.
